Dandelion Communitea has an “Eve’s Revenge” salad that I sometimes get as a wrap.
Here’s my attempt at making a similar salad at home.
1 head of romaine or cos, washed, spun, and torn
1 cup raisins
4-6oz. vegan feta
1/2 cup chopped walnuts
2-4 small red delicious apples, chopped (toss in lemon juice so it won’t go brown)

Sometimes I clean up the tired produce in the fridge and make pasta sauce. It always varies. Today I got 3 plum tomatoes, 2 medium tomatoes, 2 medium green peppers, 1 large orange pepper, 1 medium onion. Washed, halved, deseeded, and run through the blender.
