I love summer.  Julia’s out of preschool and we’re spending a lot of time together.  The first few weeks were hard because we both had to get used to the new schedule, new routine, and being so tight again.  Now that we’re hitting our groove it’s a lot less frustrating.

Hope your Halloween was a goodie!

Veganized from Sarah Schlesinger’s 500 Fat Free Recipes — “Summertime Tomato Sandwich” recipe.

1 8 oz tub of Tofutti Better Than Cream Cheese
1 clove garlic, minced
1/2 tsp dried cilantro
1/2 tsp dried thyme

An easy, fast, reliable “sick comfort food” type of dish. I’ve been eating it for breakfast for the last few days. The recipe doubles easily.

1/2 cup lentils, rinsed, drained, picked over and simmered uncovered in a pot of water for 20 min. When tender, drain.
